Cheese & Mushroom stuffed chicken fillets
This juicy stuffed chicken fillets will leave everyone satisfied and asking for more. You can serve them with some brown rice (or quinoa) or a plain green salad for a lighter meal.
Oh!!!Did I mention that you will get all the pleasure without the added calories? This recipe has only 360 Kcal per serving so it’s pretty easy to use when you are watching your diet!
For 2 servings
- 2 chicken fillets (around 200 gr. each)
- 2 large mushrooms (cut into slices)
- 4 cherry tomatoes (cut in half)
- 1 handful fresh spinach
- 1 shot dry white wine
- 2 slices reduced – fat cheddar cheese (you can use the normal one as well with a slight rise in the calories)
- lemon zest
- garlic powder
- sweet paprika
- salt, pepper
For the filling:
In a non-stick pan add a small amount of water and saute the mushrooms and the tomatoes. Next, add the spinach and cook briefly (until it’s wilted) and pour your wine and leave to reduce a bit to form your sauce.
For the chicken fillets:
Open your fillets in half (like a sandwich) and add salt & pepper. Put in one slice of cheese in each and 1 – 2 tablespoons of the sauce (with some liquid) and close your fillets. Put some salt & pepper on the outside, along with your lemon zest, sweet paprika & garlic powder. Wrap it in foil and bake in a preheated oven at about 180 degrees Celsius until the chicken is cooked through (around 30 minutes).
Once it’s done you can drizzle on the remaining of your sauce and serve with the sides of your choosing and…enjoy!
