Healthy Broccoli “Carbonara”

While not actually a spaghetti carbonara in the “traditional” term, this dish is actually a very tasty alternative. The creamy sauce is comforting and delicious while having the extra benefit of added vegetables in the form of broccoli. Aimed to please the most difficult crowds, easy to make and ready for the dinner table in only 30 minutes.

For 4 – 5 servings:

  • 500 gr. pasta (any kind you like, I personally prefer spaghetti)
  • 200 gr. light thickened cream
  • 1 large head broccoli, cut into florets
  • 1 small garlic clove, chopped
  • 1 Tbs. olive oil
  • 60 gr. pecorino, finely grated

Boil the broccoli with a little salt (but do not let it soften a lot).

Remove from the pan, refresh under cold running water and pat dry. In the same water boil the pasta following packet directions until tender. Once done drain and leave to the side, while sauteing the garlic with 1 tbs. of olive oil in the same pan.olive-oil-garlic

Remove the garlic clove and add the pasta back to the pan. Pour some of the broccoli florets along with the appropriate quantity of cream. Mix with the grated cheese and serve. Garnish with broccoli pieces and enjoy!
